Breads

Levain

Light, French-Style sourdough. White sourdough starter, organic white flour/bread flour with a small combination of whole-wheat and rye flour, water, sea salt, malt powder.

Market Loaf

Light, fluffy rustic loaf. Organic white flour, with a very small amount of rye and whole wheat flours. Water, sea salt, baker’s yeast, malt powder.

Rye Miche

Lighter Rye sourdough bread. 60% organic rye flour/rye meal and 40%organic whole wheat flour. Levain base (slight sourdough flavour) water, sea salt, malt powder.

Double Hydrated Sourdough

Equal parts organic flour and organic rye, 1/2 part organic whole wheat flour, sourdough, sea salt, malt powder, water. (60%)

 

Multigrain

Organic whole wheat flours (stoneground whole wheat and whole red fife), sea salt, baker’s yeast, organic agave syrup, malt powder. Grains- pumpkin seeds, sunflower seeds, flax seeds, kamut and millet.

Spelt Loaf

Low-glutenized bread. Organic white spelt flour (a low-glutenized organic heirloom flour), extra-virgin olive oil, water, sourdough, sea salt, malt powder. Great gluten sensitive option

Seeds and Grains Levain

Light, French-Style sourdough. White sourdough starter, organic white flour/bread flour with a small combination of whole-wheat and rye flour, water, salt, malt powder. Grains- sesame, flax, millet and sunflower seeds.

Challah

Only available on Fridays. Braided sweetened egg-bread. Organic white flour, honey, sugar, eggs, vegetable oil, baker’s yeast water, sea salt and malt powder.

Pastries

Butter Croissant

A laminated butter dough with a layered, flaky texture.

Pain au Chocolat

A laminated butter dough with a layered, flaky texture. This variant has sticks of chocolate baked into the dough.

Double Baked Almond Croissant 

A laminated butter dough with a layered, flaky texture. This variant has almond cream baked in the centre and on top of the croissant during itssecond bake and is topped with almond slivers.

Tarte au Citron

A tart shell filled with a tangy and sweet mix of lemons, eggs, sugar, and  cream.

 

Kouign Amann

Rich laminated dough with sugar rolled into the layers, baked until caramelized.

Chocolate Rye Cookie

Chocolate, eggs, and sugar and just enough rye flour to hold the mix together, topped with fleur de sel.

Cinnamon Orange Morning Bun

A rich laminated dough filled with a mixture of sugar, cinnamon, and orange zest. Finished with granulated sugar.

Almond Financier

Traditional French cake featuring brown butter and almonds. Filled and topped with brandied cherries.
